Authentic Sichuan Dishes in the Southland

I have been sent this by one of my Chinese Food spies...I lived in a place in China where Sichuan (Szechuan as they say in America)food was prepared daily. If you've never experienced "ma" then you don't know what you're missing. You're mouth burns from the chili peppers and is numbed by the hua-jiao. Delightful.
